Relocating to the new King St foodie district is not enough for Montrachet head chef and owner, Shannon Kellam. With the opening of King St Bakery in Bowen Hills, he brings to the public a wide array of sweet cakes, pastries and breads housed in a homely, traditional French boulangerie.
Start your day with a croissant or two. You can either take your artisan baked goods to-go or enjoy them on site with a cup of fresh coffee. If you’re not a fan of early morning starts, how about a glass of wine to go with your dessert? King St Bakery also has a wide selection of gluten free items for the health-conscious. King St Bakery is serving delectable pastries so good you’ll find it hard to resist seconds. The al fresco dining is also perfect for those who are out for a quick lunch and a breath of fresh air.
Bakery Interior Design
After the success of Shannon’s Montrachet relocation, the highly renowned chef again commissioned Food Strategy to work on the front and back of house for King St Bakery. The bakery’s design needed to follow the property’s design specifications, so Food Strategy served as a conduit between the client and landlord to ensure that the establishment remained compliant to these guidelines.
The shopfront features King St Bakery’s illuminated signage over double hung windows accented by stone countertops. Bi-fold doors in the middle open to the feature wall made of recycled brick and into the boulangerie. Meanwhile, the third partition features window frames where passersby can see through the temperature-controlled croissant room. Alfresco seating areas are located in front of the establishment.
The fitout features a front-facing temperature controlled room accessible from the kitchen through automatic sliding doors. Temperature in the room is regulated for making the most perfect traditional croissants and passersby get to view the magic happen through glass windows facing the street.
If the view of fresh traditional croissants being prepped for baking isn’t enough to entice you to stop and have a bite, the old-rustic interiors are bound to seal the deal for you. The client wanted for King St Bakery to be its own brand while still imbibing some of the design elements from Montrachet. The burgundy finish on the benches, for instance, tie back to Montrachet’s own traditional French restaurant theme. The decorative arches lining the ceilings and the feature walls made of recycled brick are some of the highlights of King St Bakery’s interior design. Recycled brick accents can also be found all over the place contributing to the rustic appeal of the entire establishment.
Commercial Kitchen Design
Food Strategy designed King St Bakery’s commercial kitchen for efficiency and elegance. Customers can view the food preparation area through glass windows. The visible working area is kept clean and equipped with a stone bench with steel drawers and a heavy duty mobile bench. The energy efficient rotary oven just behind the workbench constantly bakes breads and pastries to perfection. To allow for a more efficient workflow, dry storage and coldrooms are located just a few steps behind the stone bench.
