Exceptional foodservice design is on the menu at the prestigious, new Mercedes-Benz autohaus in Brisbane. Renowned chef and businessman, Shannon Kellam, has again engaged Food Strategy after the success of Montrachet and King St Bakery.

Set across three levels, each of the four kitchens has its own unique purpose and vision. Classy, seamless and precise, the designs have been carefully developed to facilitate the exemplary service expected by Shannon, Mercedes and their clients.

Level 3: The Kneadery & Lumiere

The production kitchen and culinary studio combine to consume over 700 square metres of floor space. With an extensive list of high-tech, high-precision equipment, the kitchens have been designed to produce high-end, quality food and baked goods.

The Kneadery’s foodservice design facilitates the creation of hand-crafted viennoiserie pastries and artisan bread for wholesale, as well as servicing full-scale functions and other events throughout the building and beyond. Quality and efficiency are core to the design, with multiple cooklines, temperature and humidity-controlled pastry rooms, high-capacity scullery specs and large-scale cold rooms.

The sleek, classy Lumiere culinary studio showcases million-dollar city views and is designed to allow a group experience, without losing the feel of intimacy. The entire kitchen has been designed with top-tier domestic kitchen equipment, allowing guests to transfer their culinary learning to their home environment. Complete with a private dining room, the experience is first-class.

Ground floor: Mica

Looking out onto a stunning section of Breakfast Creek, Mica will showcase a restaurant, bar and retail bakery with meticulously-positioned displays for hand-crafted goods. Groups of varying sizes can be accommodated with a mixture of high bars and stools, banquette seating, and tables and chairs. The foodservice design features a complete cookline, extensive storage and refrigeration, drinks station, efficient scullery and well-thought-out workstations.

Rooftop: Venue Name TBA

The much-anticipated rooftop venue is a premium event space, with sweeping Brisbane views and beautiful interiors. Food is cooked on level three and then finished in the rooftop’s open kitchen, which features solid-fuel and gas cooking equipment. The scullery design is geared towards speedy and efficient glasswashing to keep up with the bar’s drinks service during events.
