Twelve Boar | Brisbane Restaurant Design



The Project: (Restaurant designs and catering equipment by Food Strategy). Twelve Boar is a dynamic Brisbane restaurant design packed into a tiny 55sqm. A small site that needed to incorporate the right catering equipment and work flows to produce a unique menu on a conservative budget. The choice of equipment was critical to ensure the integrity of the menu and recipes. It had to fit and function in the existing site and ensure ongoing reliability. The interior design brief signified everything traditionally American and BBQ pit but with a contemporary twist incorporating a clean and polished concept. With clean white and black tiles, industrial pendants and seating alongside an earthy stack of timber under the bi-fold doors - the result is perfect. The location.

The Name: TWELVE BOAR – American BBQ –  Imagine yourself a thousand years ago wearing a loin cloth as you hunted on the American plains to spear a wild BOAR for dinner. (The Paleo fans will love this).  Drooling at the juicy meats, you throw the boar on the coals to slowly smoke for TWELVE hours.  That’s how TWELVE BOAR got its name. Read more at Twelve Boar.  

The Owners: Twelve Boar is Rick and Beth Palesh’s first food venture which was borne from experimenting with succulent meats and (slow) smoking at home to recreate the traditional cooking processes of Rick’s father in America. The food turned out so divine that Rick wanted to share his home-made taste sensations.  
As new small business owners they envisaged hurdles and learning curves to bring their vision to life. Here's Rick’s tips to get your kitchen and business open successfully:
“Do everything right from the beginning. Research and planning is vital. Insist on the highest quality for your project and product. Don’t settle for the cheapest – get the best quality instead. Don’t get the cheapest coleslaw from a catering company – source the ingredients and make it yourself. Insist on the best and make it yours“

The Food: Located on Middle St Cleveland, owner Rick Palesh passionately slow smokes all meat and ribs in the kitchen along with his in-house sauces.  Being from the USA, Rick insisted on re-creating his own unique American Buffalo Sauce, developed after pain-staking research and development of authentic recipes in the USA. There are 3 strengths: medium, hot and stupid hot. All meat is sourced along the pristine east coast of Australia.  American BBQ authenticity stretches to other menu items such as American Iced Tea – made exclusively from USA sourced ingredients.
